Favorite Meatloaf

Number of Servings: 6

Ingredients

    1 can (8oz) tomato sauce
    1/4 c brown sugar
    1/4 c red wine vinegar
    1 tsp mustard (yellow)
    1 egg, slightly beaten
    1 TBSP minced onion
    1/4 c cracker crumbs (up to 3/4 cup)
    2 lbs ground beef
    1/4 tsp pepper
    1 1/2 tsp salt (or to taste)

Directions

Combine tomato sauce, brown sugar, vinegar and mustard in a small bowl - set aside.

Combine egg, onion, cracker crumbs, ground beef, salt and pepper in a bowl. Add 1/2 of the tomato mixture - mix thoroughly. Shape into an oval loaf and place in pan (8x8 works good). Make a dent in top of loaf. Pour remaining tomato sauce mixture over top of meat.

Cook, uncovered at 350 degrees for 90 minutes.
