Chicken & black bean salad

Number of Servings: 6

Ingredients

    1T Jerk or Taco seasoning
    Chicken Breast, no skin, grilled, 1 lb
    Goya Black Beans, 1 can
    Red Pepper, 1 medium chopped
    Chives or green onion, 3 tbsp chopped
    Romaine Lettuce, 2 heads shredded
    Pineapple, grilled, 6 slices, 1/2" thick
    Pineapple Jam, sugar-free, 2 tbsp
    Limes, 2 squeezed, 1 zest removed
    Light Mayonnaise, 1/3 cup

Directions

Slice ckicken into strips, coat w/seasoning & place on grill with pineapple. Cook chicken 4 mins on each side until cooked & grill pineapple on both sides. layer lettuce on large plates, cut chicken into chunks & place on lettuce with pineapple. Pour beans over the top, sprinkle red pepper & chives over the beans.
For dressing: Remove zest from one lime, put in small bowl, squeeze juice from both limes into the bowl, add jam & mayo blending to mix. Pour over salad. Serves 6 generously.
