Ingredients

2 tsp olive oil
1/4 cup green bell peppers chopped
1/4 cup red bell peppers chopped
1/4 cup onion chopped
Coarse Sea Salt (to taste)
Black Pepper (to taste)
1/2 cup Egg Beaters (egg substitute)
2 slices 40 calorie light wheat bread, toasted
1-1/4 cup skim milk
Directions
Start by sautéing the peppers and onions in the olive oil for 3 to 4 minutes on medium high heat until they are soft and the onions are clear. Add coarse sea salt and pepper to taste. Add egg beaters and cook for about 3 minutes until the eggs are cooked through. Pour omelette over two pieces of toast. Enjoy with a glass of ice cold skim milk and you have a great start to your day!
