Introduction

Great for breakfast or snacks. Can substitute 1 tbs ground flaxseed and 3tbs water mixed together for egg. Great for breakfast or snacks. Can substitute 1 tbs ground flaxseed and 3tbs water mixed together for egg.

Ingredients

    .5 cup smart balance
    .75 cup packed brown sugar
    .25 cup egg substitute (or 1tbs ground flaxseed mixed with 3 tbs water)
    1 cup whole wheat flour
    1 tsp baking powder
    .25 tsp baking soda
    .25 tsp salt
    .75 cup unsweetened applesauce
    1 cup oats
    1 cup semisweet chocolate chips

Directions

Mix dry ingredients. Add wet ingredients. Put in cupcake tins and bake 20-25 minutes at 350 degrees, until golden brown on top. Makes 12 muffins.
