3 Egg whites
1/8 tsp ground white pepper
1/2 cup Shiitake Mushrooms, stemmed and chopped coarse
1/2 medium green or red bell pepper, seeded and sliced thin
1/2 medium white onion, sliced thin
In a small bowl, beat egg whites with 1/8 tsp white pepper and pour into same skillet.
As egg whites set, gently lift around the edges and allow uncooked liquid to drain underneath. Gently flip the egg whites over and add vegetables to one side and fold other side on top.
Remove from pan and enjoy!
