Banana Pecan muffins

Introduction

I found a banana muffin recipe that sounded good so I made them but made substitutions to keep it low sugar. This is my revamped recipe: I found a banana muffin recipe that sounded good so I made them but made substitutions to keep it low sugar. This is my revamped recipe:
Number of Servings: 12

Ingredients

    1 c. whole wheat flour
    1/2 c. white flour
    1/4 c. splenda
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt (optional)
    1/2 tsp. cinnamon
    1/2 c. egg substitute
    1 1/2 cups mashed banana
    1/3 c. skim milk
    1/3 c. pecans or any nuts you like, chopped


Directions

Serving size 1 muffin
Makes 12 servings

Note: Because there is virtually no fat in these muffins, it is suggested that you do not use cupcake papers as the muffins will stick to them.

Grease 12 muffin tin cups.
Combine all the dry ingredients in a bowl.
In a separate bowl, combine mashed banana, egg substitute, and skim milk and mix. Add to dry ingredients and stir until well blended. Fold in chopped nuts if desired.
Spoon into prepared muffin tins and bake at 400 degrees for 20 - 25 minutes or until firm to the touch. Cool in pan for 5 minutes and remove to wire rack to finish cooling.

The calories calculated do not include salt in the muffins so make sure to add for that if you use it.

These are not a really sweet muffin so you can eat them with a little jam or fruit if you like.
