Greek Chicken with Couscous

Introduction


Serving tips: Spoon couscous/chicken mixture onto dinner plates and then sprinkle with feta cheese and olives.

Number of Servings: 8

Ingredients

    1. 2 lb boneless, skinless chicken breast halves
    2. 2 14 ½ oz cans of diced tomatoes with basil, garlic, and oregano (UNdrained)
    3. 1 ½ cups of water
    4. 2 6oz packages of couscous with toasted pine nut mix
    5. 1 cup crumbled feta cheese (4 oz)
    6. ½ cup pitted kalmata olives, coarsely chopped (or regular black olives if preferred)

Directions

1. Cut chicken into ½ inch pieces. Place chicken in 3 ½ or 4 quart slow cooker crock pot.
2. Pour tomatoes and the water over the chicken.
3. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2½ to 3 hours (I usually cook it on high for 4 hours or low for 8 hours – works fine)
4. Stir in couscous.
5. Cover and let stand for 5 minutes. Fluff couscous mixture with a fork.

  • Only change I would make is that instead of canned tomatoes I would substitue cherry or roma tomatoes cut up and added after the couscous is cooked and cooled. Along with roasted chicken shredded. - 6/18/11
