Ingredients

1 lb dry whole wheat penne pasta
1 pckg mori-nu firm silken tofu, drained
1 c sun dried tomatoes chopped (reconstituted in warm water & drained)
3 cloves garlic, minced
1/4 c chopped fresh basil
2 T balsamic vinegar
2 T olive oil
Salt & freshly ground black pepper to taste
2 T chopped fresh parsley
Directions
Soak dried tomatoes in warm water. Cook pasta according to package directions.
Meanwhile, drain sundried tomatoes. In a food processor, combine tomatoes & remaining ingredients except parsley & process until smooth, adding 1-2 tablespoons of pasta water to thin sauce to desired consistency.
Drain pasta & transfer to serving bowl. Spoon sauce over pasta & toss to mix. Sprinkle with parsley & serve.
