black beans and brown rice

Ingredients

    2 cans black beans
    1tbsp olive oil
    1 small onion, chopped
    1 tsp cumin
    1tsp thyme
    1tsp ground mustard
    1 tbsp crushed red pepper flakes


Directions

in saucepan saute onions and garlic in olive oil until just tender. Add spices and stir. Add to this 2 cans of black beans. Let simmer for 10-15 minutes. Add salt and pepper to taste. Serve over 1/2 cup brown rice and enjoy!

  • Added 3 minced garlic cloves with onions. Spicy, I used 1 tsp instead of Tbsp of chili flakes. Filling and yummy! - 1/4/11
