Summer Black Bean and Corn Salad

Ingredients

    2 cans of yellow, white or mixed corn
    2 cans of black beans, drained
    1 jar of salsa (your preference)
    1 medium avocado, diced
    juice of 1 lime
    4 Tbsp of fresh cilantro, minced

Directions

In large bowl, combine corn, black beans, salsa, lime juice and avocado. Let sit in refrigerator overnight to allow the flavors to come together. Add the cilantro prior to serving. Makes 16 1/2-cup servings.
