IntroductionA great once in awhile treat! A great once in awhile treat!
2.5 cups diced rhubarb
3 tsp flour sprinkled over rhubard
Beat 3 eggs and a pinchof salt
Add 1/2 cup sugar
1 tbsp of real lemon juice.
Pour over rhubarb in an unbaked pie shell
Cool and enjoy!

my husband loves rhubarb pie, but in 22 years I have never made him one, I always rely on relatives for that, but this recipe looked so easy I tried it and he loved it, had two helpings and made sure I saved him the rest for the next day. - 7/2/08

It is my husbands absolute favourite too, and I love that it is so easy!!! Left overs are fabulous! ENJOY!
