2 7.6 oz packages chunk light tuna in water
6 Tbsp extra virgin olive oil
1/8 cup lemon juice
3 cloves garlic; minced
1 Tbsp ground sage
4 Tbsp country crock butter with calcium
3 Tbsp parsley; dried
3 Tbsp chives; fresh, chopped
1 1/2 cups frozen peas; thawed
1 10oz package frozen spinach; thawed & drained
1/2 cup canned mushrooms
Add garlic and mushrooms to saute slightly.
Add lemon juice and seasonings; mix thoroughly.
Add spinach, peas & tuna; heat through.
* Serve over a 4 oz bed of spinach pasta.
