Light Greek Salad

Introduction

I love to make this for a lunch on its own. I love to make this for a lunch on its own.
Number of Servings: 2

Ingredients

    2 Cups Shredded Romaine lettuce
    1 oz kalamata olives
    1 cup cherry or grape tomatoes
    1 cup crumbled feta cheese
    1 slice sweet onion (optional)
    1 cup cucumber
    2 TBS extra virgin olive oil
    1 lemon, juiced
    1TBS dried oregano

Directions

Combine all but last 3 ingredients and distribute evenly over two plates. Drizze both with olive oil, juice from half the lemon, and sprinkle with the dried oregano. Serves 2 adults a very big salad.
