Ferber's, Not my Mom's, Baked Ziti

Introduction

I enjoy Baked Ziti. However, since dieting I have been able to eat it. So, I decided on Father's Day to revise my recipe to make this fit into my daily meal plan without consuming to many calories. My wife has less calories than I have so I made it work for the both of us. I enjoy Baked Ziti. However, since dieting I have been able to eat it. Ingredients

    1/2 cup Sargento Light Ricotta Cheese
    1/2 cup Kraft Mozzarella, Fat Free Cheese
    2 cups Ferber's, now Famous, Spaghetti Sauce
    4 oz Ronzoni, Whole Wheat Penne Rigate
    1/2 Egg, fresh
    Pam Cooking Spray

Directions

Makes 2 Servings

Preheat oven to 375 degrees.

Cook pasta according to package directions, drain.

I use two 6 inch Pyrex casserole dishes when I make this recipe. One for me and one for my wife.

Mix ricotta cheese and 1/2 egg together.

Mix 2 oz pasta, 1/2 cup of sauce, 1/4 cup mozzarella, and 1/4 cup ricotta together in a mixing bowl. Leave a little mozzarella cheese to put on top.

Spray bottom of casserole dish with cooking spray for an easier clean-up.

Pour 1/4 cup sauce in bottom of casserole dish. Spread ziti mixture into the casserole dish. Top with the rest of the sauce and the remaining mozzarella cheese.

Repeat for the other serving.

Cover with aluminum foil.

Bake covered for 20 minutes until hot and bubbly. Remove foil and cook for about 10 more minutes to brown cheese on top.
