Barb's Amazing White Chocolate Fruit Muffins

Introduction

Number of Servings: 14

Ingredients

    2 cups flour
    3/4 sugar
    2 Teas baking powder
    1 Teas baking soda
    dash salt
    1 TBSP orange zest
    2 Teas vanilla extract
    6 oz non-fat yogurt (vanilla flavor) best)
    6 oz milk (2%)
    1 cup white chocolate chips
    1 diced pear (ripe)
    1/3 cup cranberries
    1/3 cup raisins
    1/2 walnuts

Directions

Mix/sift all dry. Make well and stir in vanilla flavor yogurt and 6 oz milk. Add 1-2 teas vanilla extract and orange zest. Stir very lightly (do not overmix). Add 1 cup white chocolate chips, 1/3 cup each of cranberries and raisins and 1 diced pear. Gently stir in 1/2 cup walnuts (best if slightly ground to bring out flavor). Use Ice Cream scoop and place in muffin / cupcake liners.

Bake 350 for 20-25 mins. Let cool. Keep covered. Delicious!!
