Number of Servings: 2

Ingredients

    2/3 c bulgur ( tabbouleh)
    1 2/3 c water
    1/3 fresh lemon juice
    1 cup chickpeas drained
    1/4 tsp black pepper
    1 cup grape tomatoes
    1/2 red onion chopped
    1/2 c chopped parsley
    1 Tbsp olive oil
    1/2 ( 2 oz) feta cheese
    1/4 tsp salt

Directions

1. In a saucepan combine bulgar ,water 2 tablespoons of lemon juice to a boil. Cover and simmer until tender, about 15 min. Drain and let cool.
2. Place beans in large serving bowl. Sprinkle with 2 tablespoons of lemon juice and 1/8 teaspoon of black pepper. Let stand for 5 min.

3. Stir in cucumber, tomato, onion, parsley and oil, and feta cheese . Add salt and remaining lemon juice ( 1/4 teaspoon) pepper and toss.

4. Stir in cooled bulgur. Serves 2.
