2 Extra Large Eggs
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp black pepper
1/4 tsp garlic powder
1/4 cup Soy flour
1 cup grated zucchini
1 tbls finley chopped onion
1/4 cup parmesan
2 tbls vegetable oil
2. Add the soy flour, zucchini, cheese, and onion and wixk well.
3. Put 2 tsp oil in a small non stick skillet over medium heat. Drop a 1/4 cup of batter in the pan and cook for aprox. 2 minutes on each side until golden brown. Continue untl all 4 pancakes are cooked.
4. These are really good sprinkled with salt and dipped in a little low carb ketchup
