Spinach and Sweet Potato Dhal

Ingredients

* Olive Oil 1tbsp
* Onions, raw, 1 medium (chopped)
* Garlic, 1 tsp
* Ginger Root, 0.5 tsp
* Wholegrain Mustard, 1 tsp
* Red Lentils, 1 cup
* Curry powder, 1.5 tsp
* Sweet potato, 1 cup, cubes
* Vegetable stock, home-prepared, 1 cup
* Coconut Milk, 2 tbsp
* Spinach, frozen, 125 grams
Directions
Saute olive oil, onion, garlic, ginger and mustard until onion softened.
Add Lentils and Curry Powder and cook for 2 minutes while stirring.
Add stock, sweet potato and coconut milk and cook for 30 minutes on low heat. Adding water as needed
Add spinach during last few minutes of cooking
Serve with Couscous
