Vegetarian Tofu Burritos

Introduction

Ingredients

    2 Mission Whole Grain Tortillas

    1/2 Cup Black Beans
    1/4 Block of MoriNu Silken Tofu, Firm, Lite
    2 Tbls Salsa
    1 tsp Minced Garlic
    1/4 Cup Chopped Onion

    1/4 cup Mexican Style Cheese Blend

Directions

In a saute pan, heat up the salsa and garlic. Break up the tofu and add to the heating mixture. Stir the tofu so it is in smaller chunks and completely covered by the salsa/garlic mixture. Add the onion and cook until the onions are cooked to your liking. Add the black beans.

Once the black beans are heated, split the mixture between the two taco shells. Top with the cheese and enjoy!

If you want to cut calories, you might be able to eliminate the cheese because the mixture tasted fine without it. That would cut 110 calories. :)
