Easy Slow Cooker Curried Lentils

Introduction

Ingredients

    2 teaspoon curry powder
    1 teaspoon ground cumin
    1 teaspoon ground ginger
    1/4 teaspoon turmeric
    1/2 teaspoon cayenne
    1 medium onion -- chopped
    1 jalepeno pepper - chopped
    3 cloves garlic -- crushed, minced
    1 cup lentils -- rinsed
    1 package (10-oz size) chopped spinach, partially thawed and broken up
    2 cups low sodium, organic vegetable broth
    1 can diced organic, low-sodium tomatoes
    Salt to taste
    Chopped tomato and mint for garnish -- if desired

Directions

Combine ingredients in the crockpot. Cover and cook on LOW for about 6 hours, or until rice and lentils are tender but not mushy.

Serve garnished with chopped tomato and mint if desired. Can be served over rice, or alone. Makes 4 servings.
