Stuffed Split Chicken Breasts

Introduction

Ingredients

    3 split chicken breasts w/ skin
    1 c onion, chopped
    1/2 c celery, chopped
    1/2 c bell pepper, chopped
    1 tsp marjoram or thyme
    1 1/2 Tbs Land O Lakes light butter
    Stove Top Whole Wheat Chicken Stuffing Mix
    1 c Chicken Broth
    1 tsp EVOO

Directions

Brine Chicken: Rinse breasts and place in ziploc; fill w/ water and about 3 Tbs kosher salt. Place in fridge 1 1/2 hours.

Meanwhile make stuffing. Put all veggies & seasoning in skillet w/ butter. Saute until tender. Add stuffing mix and saute 1 min more. Add broth.

Drain chicken, do not rinse, pat dry thoroughly. Gently separate skin from meat by running fingers beneath it until you have a pocket. When stuffing is cool enought to handle, work it in the pocket. Stuff full without tearing skin. Rub EVOO on skin and sprinkle it with salt-free seasoning or cracked pepper. Bake about 45 min, covering w/ foil halfway through cooking time. Cook until meat thermometer reads 180.
