Lemon Garlic Rosemary Spinach

Introduction

This is a super-fast, super-easy and super-delicious way to enjoy fresh spinach. Adds lots of flavor. This is a super-fast, super-easy and super-delicious way to enjoy fresh spinach. Adds lots of flavor.
Number of Servings: 1

Ingredients

    1) 1.5 cups fresh spinach (use pre-washed and bagged for easy prep)

    2) 2 Tbsp lemon juice (about 1/2 of a medium lemon, if using fresh-squeezed)

    3) 3 tsp dijon or spicy mustard

    4) 2 tsp roasted garli puree or paste (I use Alessi, located near pasta and pasta sauce aisle in grocery store)

    5) 1-2 tsp dried rosemary

    6) 1 tsp olive oil

Directions

1) Heat olive oil in small skillet until it easily spreads (about 30 seconds)

2) Add mustard, lemon juice, roasted garlic, and rosemary; whiskwith fork util combined

3) Add spinach, and stir briskly until it wilts and achives desired consistency, and is well-coated by lemon juice mixture (I like mine very warm and wilted--about 2 minutes).

That's all there is to it! Makes 1 serving, about 1/3 cup cooked (1.5 cups fresh).

  • This recipe did not taste the way I thought it would. However, I wll make this recipe agin, with a modifications. I will not use the rosemary and will reduce the amout of mustard used. - 9/16/09

  • Excellent. Not a Spinach eater but I had to try. I had this with Chicken and salad. Very tasty with the Chicken. Very easy to make. - 6/26/08
