Lorraine Style Quiche

Introduction

Number of Servings: 8

Ingredients

    Crust:
    1 cup whole wheat pastry flour
    1/2 teaspoon onion salt
    1/4 cup olive oil
    2 to 4 tablespoons water

    Quiche Filling:
    8 slices bacon, cut up
    1/4 cup diced ham
    1 tablespoon dried minced onion
    1 cup grated swiss cheese
    1 cup Egg Beaters Egg Substitute
    1 12-oz. can evaporated skim milk
    1/2 teaspoon onion salt
    1/4 teaspoon nutmeg
    1/8 teaspoon white pepper



Directions

1. Preheat oven to 350.
2. Combine the pastry flour, 1/2 teaspoon onion salt, and olive oil in a mixing bowl and stir until well mixed. Gradually add water until you get a dough that you can roll out easily.
3. Roll out dough between 2 pieces of wax paper. Keep turning the dough over and straightening the wax paper and rolling again until it is big enough to fit in a 9 " pie pan.
4. Line a 9" glass (pyrex) pie pan with the dough.
5. Fry up the bacon pieces until crisp and drain on paper towel. Then scatter them in the pie shell.
Strew the ham on top of the bacon. Then sprinkle with the dried onion. Cover with the grated swiss cheese.
6. In a medium mixing bowl, beat together the Egg Beaters, evaporated skim milk, 1/2 teaspoon onion salt, nutmeg, and white pepper. Pour over the ingredients in the pie shell.
7. Bake at 350 for about 45 minutes or until puffy and golden.
8. Cut into 8 pieces. Makes 8 servings.
