Adapted from HungryGirl.com. Hungry Girl is a genius when it comes to recipe conversions! To make it specila use a short, sweet Persian cucumber. Add a dash of lemon pepper seasoning, too! Ingredients

    1 C cooked & roughly chopped skinless lean chicken breast

    1/2 C chopped cucumber

    1/3 C red seedless grapes, halved

    1/3 C chopped apple

    1/4 C plain fat-free yogurt

    2 TBSP fat-free mayo

    1 no-calorie sweetner packet (Splenda)

    optional:
    1/4 tsp Lemon Pepper
    dash salt

    (the optional ingredients are not included in the nutritional calculations)


Directions

Mix together the yogurt, mayo, sweetener, lemon pepper & salt. Coat the chicken in this mixture then stir in the chopped cucumber, grape halves & chopped apple. Then...chow down!!
