Chicken Thighs With Fresh Basil

Ingredients

8 boneless/ skinless chicken thigh's (or whatever part you prefer)
1 jalepeno, deseeded, finely chopped OR
1 Tbsp of jarred diced jalepeno's
3 cloves of garlic
1shallot
2 Tbsp of vegetable oil
1/2 cup mushroom slices
1/2 cup bamboo shoots or water chestnuts
1 tsp sugar
1 tbsp soy sauce
1/2 c. fresh basil or 2 Tbsp dried basil
Directions
Makes 8 pieces of chicken. You can have 2 pieces of meat and that only takes you to 248 calories.
1. Puree jalapeno, garlic, and shallot with a little water in a blender or magic bullet until well chopped.
2. Heat oil in a skillet over medium heat-add puree; cook, stirring continually until mixture is fragrant (about 1.5 minutes to 2 minutes). Increase heat to med-hi and add chicken.
3. Add mushrooms to skillet, cover. Turn chicken occasionally until chicken is cooked through, about 15 minutes. Add bamboo shoots or water chestnuts to mixture.
4. Stir sugar and soy sauce together in a small bowl. Add to skillet; stir until sauce is heated through. Remove from heat, sprinkle fresh basil over chicken...serve with rice and a veggie! MMMMMMMMMM!!!!!!!
