4 cod fillets, poached and flaked 2 lg eggs, beaten 1 tbsp parsley 1/4 cup seasoned bread crumbs tobasco sauce 1 cup saltines,crushed
In large bowl, stir together cod, eggs, parsley, bread crumbs, tobasco, salt and pepper. Form mixture into patties, and coat with saltines. Fry in veggie oil 2-3 minutes on each side, or until golden. Transfer fritters to paper towels to drain. Serve warm with tartar sauce.
