Number of Servings: 6

Ingredients

    Cider Vinegar, 1/3 cup
    Granulated Sugar, 1/4 cup
    Lemon Juice, 2 Tbsp.
    Salt, 1 tsp
    Canola Oil, 1/4 cup
    green onion, chopped
    Poppy seed, 1/2 tsp
    dry mustard, 1 tsp.
    paprika, 1/2 tsp.
    Spinach, fresh, 1 package (10 oz)
    Strawberries, fresh, 1 cup, sliced
    Mushrooms, fresh, 1 cup slices
    Red onion, sliced

Directions

In a saucepan, heat cider vinegar, sugar, lemon juice and salt until sugar is dissolved. Set aside and allow to cool. In another bowl, whisk together remaining dressing ingredients. Add vinegar and sugar mixture and stir. Refrigerate.

Chop spinach and toss with berries, mushrooms & onions. Optional to add pecans or walnuts. Drizzle a couple of tablespoons of dressing over individual salad servings.
