Quinoa Salad

Ingredients

    Ancient Harvest Inca Red Quinoa (dry, uncooked), 1cup
    Raisins, .5 cup (not packed)
    Olive Oil, 3 tbsp
    Lemon juice, 2 tbsp
    Plain Yogurt, .5 cup
    Cashews, Raw, 0.25 cup
    Onions, raw, 1 slice, large (1/4" thick)
    Garlic, 1 clove
    Salt, .25 tsp
    Basil, 10 leaves

Directions

Cook the Quinoa According to Directions. I do it the easy way and Bring 2 cups of water and 1 cup of Quinoa to Boil. Boil 5 minutes, then let it sit for 15 minutes.

After it has cooled down to room temperature, add the remaining ingredients and mix!

Chill to serve!

This is soooo yummy!
