AJC Sausage Vege Soup

Introduction

Just a throw in of everything leftover from the fridge with a nice result Just a throw in of everything leftover from the fridge with a nice result
Number of Servings: 4

Ingredients

    1/2 cup Split Peas
    1 Med Zucchini Diced
    1 Med Carrots Diced
    1 Fennel Bulb Sliced
    Canned of Diced Tomatoes
    Cube of Butter
    1 cup of Water
    3 4" Beef Sausages de skinned and rolled into mini balls (flavoured sausages are great for this)
    Pepper for seasoning


Directions

Melt butter in Sauce pan, throw in the carrot and Fennel and cook for 3 minutes.
Pre-cook the Sauages balls in a small frying pan
Add Water, Zucchini and Tomatoes and bring to the boil
Then add split peas and sausage balls, then simmer for 30 mins.
