Balsamic Glazed Seitan with Mushrooms 2

Ingredients

1 tbs canola
1 package white wave seitan
1 10oz package mushrooms, sliced
1 bunch asparagus, cut into 2" pieces
2 tsp garlic or shallots
1/2 cup plus 2 tbsp balsamic vinegar
1 cup vegetable stock
2 tbs agave nectar or honey
thyme, salt and pepper to taste
Directions
boil seitan for about 5 minutes to soften, drain and set aside.
heat 1/2 tbs oil in skillet to medium - be sure the skillet is fully hot before adding seitan and searing about 5 minutes on each side. Remove from pan and set aside.
add other 1/2 tbs oil to pan and add garlic, saute briefly then add asparagus and mushrooms (salt and pepper as desired), stirring till mushrooms are soft and browned. Remove from pan and set aside.
Add balsamic vinegar, stock and agave, and simmer until reduced by about half. Add a bit of cornstarch slurry to thicken, if desired. Stir in thyme, seitan and mushrooms to coat. Add salt and pepper to taste. Heat thoroughly and serve.
Delicious with brown rice and wilted spinach.
