Mashed Potato Salad

Introduction

A new spin on an old classic, low fat and delicious too! A new spin on an old classic, low fat and delicious too!
Number of Servings: 12

Ingredients

    5 medium Yukon gold potatoes, scrubbed, cubed and well-cooked
    5 medium red potatoes, scrubbed, cubed and well-cooked
    2/3 cup plain, low-fat yogurt
    1/3 cup low-fat mayonnaise
    1 tbsp mustard
    3 tbsp relish
    1 medium red onion, diced
    1 stalk celery, diced
    1/4 tsp red pepper flakes
    salt and pepper to taste

Directions

Mash potatoes to your preferred texture (for very smooth potatoes use a ricer or food mill).
Beat in yogurt, mayonnaise, mustard and relish.
Fold in onion, celery, and pepper flakes, as well as salt and pepper if desired.
Serve cold.
