Caprese Cristo Sandwich

Introduction

Ingredients

    1 medium tomato, sliced
    1 oz fresh mozzarella, part-skim
    2 T fresh basil leaves
    2 tsp dijon mustard
    salt and pepper to taste
    2 pieces light whole grain bread
    1 egg
    1 oz milk, 1%
    1 tsp butter

Directions

Spread 1 tsp mustard on each slice of bread. Put sliced tomatoes, basil and mozzarella on bread and close up sandwich.

Scramble egg and milk together in shallow bowl. Dip sandwich in egg mixture. Melt butter over medium heat in non-stick skillet. Fry sandwich on both sides until light brown.

Makes 1 serving.
