This is my step-dad's meatloaf and it's by far my favorite. You can add whatever herbs and spices you like, but I prefer a little Italian seasoning in mine.Very simple but delicious! Ingredients

1 1/2 lb lean ground beef
1/2 small onion, diced
1 small green bell pepper, diced
15 Multi-Grain Saltine Crackers, crushed
1 small can tomato sauce
1 large egg, beaten
Salt, pepper and herbs, to taste
Directions
Preheat oven to 350 degrees F and prepare loaf pan or 8x8 baking dish.
Mix all ingredients together and form a loaf. Place in pan and bake for 1 to 1 1/2 hours.
Serves 8.
