4 fish fillets, ~1.5 lbs (I use tilapia) 1/3 cup bread crumbs 1/4 cup shredded parmesan
Preheat oven to 450 degrees. Lightly coat a baking sheet with non-stick cooking spray. Rinse and pat dry fish, season with salt and pepper if desired. In a small bowl, stir together bread crumbs and cheese; sprinkle on fish. Bake, uncovered, 4-6 minutes per 1/2 inch thickness of fillet, until crumbs are golden and fish flakes easily when tested with a fork. I serve it with a green salad and whole wheat roll.
