Angel Food Pudding Cake

Introduction

This recipe is REALLY good, and nice and light. The angel food cake is so moist and soaks up the flavor of the pudding and fruit. Really tasty. (This recipe is from my Mother-in-law) This recipe is REALLY good, and nice and light. The angel food cake is so moist and soaks up the flavor of the pudding and fruit. Really tasty. (This recipe is from my Mother-in-law)
Number of Servings: 14

Ingredients

    1 8" Sugar Free Angel Food cake, cut into bite sized cubes
    1 box sugar free vanilla pudding
    1 small can crushed pineapple
    2 cups strawberries, sliced
    1 small container fat free cool whip
    2.5 c. skim milk

Directions

Cut the cake into cubes and sprinkle over half in the bottom of a 9x13 dish. Open and drain the pineapple, reserving about 1/4 c. of the juice. Mix the pudding mix with the milk and the 1/4 c. of pineapple juice. Add one cup of the cool whip.

Spread enough of the pudding mixture to cover the top of the cake cubes. Put a thin layer of the strawberries on top. Repeat layers one more time and top with the remainder carton of cool whip.

Makes approx. 14 large servings.
