1 whole egg
2 egg whites
1 cup of thick Southwest Salsa
1/2 black beans
Plateful of Mixed Salad Greens
Pour into a pan and cook on one side an until nearly cooked. Flip (it will crumble) and then serve on top of the bed of greens. If I were good, I'd split it, but I was hunger!
