3 cans of black beans, drained 1.5 cups frozen corn kernels, defrosted and microwaved for a minute or the corn from 3 ears fresh 1.5 cups chopped tomato 1/2 cup chopped scallions 1/3 cup olive oil 1/3 cup lemon juice 1/4 cup chopped cilantro salt and pepper
Place beans in microwave for 2-3 minutes to heat up. Add tomatoes, corn, olive oil, lemon juice, cilantro, salt and pepper. Mix well and let cool to room temp outside of fridge. Refrigerate until serving.
