* Olive Oil, .5 cup
* *Organic All-Purpose White Flour, 2 cup
* **Flax Seed Meal (ground flax), 3 tbsp
* Granulated Sugar, 1.5 cup
* Zucchini, 2 cup, mashed
* Cinnamon, ground, 1 tsp
*Baking Soda, .5 tsp
*Baking Powder, 2 tsp
Now, beat your sugar and oil together, then beat in your flax paste. Stir through the zucchini till well combined. Finally, add your dry ingredients and mix well. Pour into a large cake tin and put into a pre-heated oven at 190 degrees celcius for 45 minutes.
Serve warm or cool with a cup of tea.
