Orange Cranberry muffins

Ingredients

2 cups flour (I use 1 C. organic white & 1 C. whole wheat)
3/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup cranberries (I use Ocean Spray's orange essence dried "craisins")
2 egg whites (I use 1/2 C. Egg Beaters Egg Whites)
3/4 cup orange juice (I use Tropicana light 'n healthy)
1 container (4oz) unsweetened Mott's apple sauce (I use Granny Smith flavor)
1 teaspoon grated orange rind
Directions
Preheat oven to 400 degrees.
1. Combine dry ingredients.
2. Stir in cranberries.
3. Beat egg whites, orange juice, applesauce and orange rind.
4. Add to dry ingredients all at once.
5. Stir just to moisten.
6.Spoon into greased muffin cups. (or paper lined)
7. (fill 3/4 full).
8.Sprinkle tops lightly with a bit of sugar. (optional, not in nutritional information)
9. Bake at 400F 15-20 mins. until lightly browned and firm to the touch.
Makes 20 standard size muffins.
