Fancy-Ass Mediterranean Cucumber Sandwiches

Introduction

These are fancy, tasty and oh so good for you. Serve them the next time you're entertaining and everyone will be impressed.
This recipe makes about 5 lil' sandwiches.

Number of Servings: 1

Ingredients

    1/4 cucumber with skin
    1 oz crumbled feta cheese
    2 oz hummus (I prefer Sabra Roasted Red Pepper hummus myself)
    <1/4 red onion
    a dash of black pepper

Directions

1. Scrub cucumber skin if waxed or nasty.
2. Slice cucumber into pieces about as thick as a nickel. You should end up with about 10 slices.
3. Spread a small dollop of hummus on 5 of the slices. Set aside the other 5.
4. Slice red onion as thin as you can. Cut into bite-sized pieces if necessary. Lay red onion on top of hummus on cucumber slices.
5. Sprinkle hummus-coated slices with feta cheese and a little black pepper.
6. Top each decorated slice with a fresh cucumber slice to make sandwiches. Serve chilled to fabulous people.
