Burrito Casserole



Introduction

This is adapted from a recipe I found on All Recipes. I've changed it for our family and it is a favorite with everyone - tots to teens. Number of Servings: 16

Ingredients

    1 box of three packages ground Boca (12 oz)
    1 large onion, chopped
    1 clove minced garlic
    1 4 oz can green chiles
    2 cups salsa
    2 16-oz cans fat free refried beans
    12 8-inch flour tortillas
    2 cups Monterey Jack cheese, shredded

Directions

1. Preheat oven to 350 degrees F.
2. Prepare Boca in microwave. Saute onion and garlic for about 5 minutes in your largest skillet, add Boca and continue cooking for about another minute. Mix in the chile peppers, tomatoes, salsa and refried beans. Mix well and let simmer for 15 to 20 minutes.
3. Spray the bottom of a lasagne pan well. Cover with a layer of tortillas followed by 1/3 meat mixture, then 1/3 of the cheese. Repeat layers, ending with cheese.
4. Bake for 20 minutes or until cheese is melted. Top with fat free sour cream, raw onions or whatever toppings sound good!
