Mexi-Italian Cannelloni

Introduction

I came up with this one, when I couldn't decide on having either pasta or tacos. I also serve salad as a side dish with this. I came up with this one, when I couldn't decide on having either pasta or tacos. I also serve salad as a side dish with this.
Number of Servings: 4

Ingredients

    1 lbs lean ground beef
    1pkg. taco seasoning (low sodium)
    1c Low fat cottage cheese
    1-2c shredded cheese (your choice)
    1 680ml can of tamato sauce
    cannelloni

Directions

Brown beef and drain. Add taco seasoning as directed. Cool. Stir in cottage cheese. Preheat oven to 350. Spread half of the spaghetti sauce on the bottom of baking dish. Stuff cannelloni with beef mixture.Place in dish. Cover with remaining spaghetti sauce. Cover with foil and bake until fork tender. Add shredded cheese and place under broiler until melted. Serves 4.
