Bean Chili

Ingredients

    1 tbsp olive oil
    1 medium onion, chopped
    6 cloves garlic, minced
    1 green pepper, chopped
    1 carrot, chopped
    2 cans crushed tomatoes
    1 can black beans, drained
    1 can red kidney beans, drained
    1can pinto beans, drained
    1/3 cup chili powder
    1 tbsp cumin
    1/2 tsp cayenne pepper
    1 tsp oregano
    1 bay leaf
    1 tsp red wine vinegar
    salt and pepper

Directions

Heat oil in large pot. Saute onion, pepper and carrot until soft, 5 min. Add garlic, cook additional minute. Add the rest of the ingredients except for the vinegar. Cover and simmer for about 30 minutes. Stir in vinegar and taste for seasoning.
