Introduction

This filling salad has a fresh taste and lots of protein. This filling salad has a fresh taste and lots of protein.
Number of Servings: 8

Ingredients

    1 19-oz can garbonzo beans, rinsed and drained
    1 19-oz can fava beans, rinsed and drained
    1/3 cup fresh basil, chopped
    2 tsp extra virgin olive oil
    1/4 cup + 1 tbs balsamic vinegar
    1/3 cup reduced fat feta cheese
    salt and pepper to taste

Directions

Mix beans in a medium bowl
Add olive oil, vinegar and stir
Add basil and stir
Add crumbled feta cheese and stir
Add coarsely ground salt and freshly ground pepper to taste
Mix well, chill and serve
