1 tsp olive oil
1 cup chopped onion
4 cups chicken broth
2 cups water
1/2 tsp salt
1/4 tsp pepper
3 medium beets, peeled and halved
1 medium potato,halved crosswise
1 bay leaf
1 tsp lemon juice
In a large stock pot, heat oil. Add onion and cook for 3 min or until tender. Add broth, water, salt, pepper, beets, potato, and bay leaf. Bring to boil, reduce heat and simmer uncovered for 20 minutes. Discard bay leaf. Puree soup with hand blender. Remove from heat and stir in lemon juice.
