Foil Chicken Pockets

Introduction

Ingredients

    Chicken Breast
    Half a Zuchini
    Half a Yellow Squash
    Onion to taste
    Italian Salad dressing
    Foil

Directions

Pre-heat oven to 450 degrees.

Coarsely chop onion and slice zucchini and squash into half- rounds.

Arrange chicken breast, onion, zucchini, and squash on a large sheet of foil, or in a pre-made foil pouch. Pour dressing on top.
Fold up 2 ends and roll together. Close the open ends leaving some room in the pouch for air to circulate.

Place on a cookie sheet and bake at 450 degrees for 15-20 minutes depending on thickness of chicken.

Remove from oven and cut chicken at thickest part to be sure it's cooked all the way through.

We do three at a time, that's what fits on our cookie sheet. The vegetable amounts and types are reccomendations, but this is what we use and they come out excellent!
