500g frozen spinach (thawed and drained)
375g reduced fat ricotta cheese
375g reduced fat cottage cheese
500g jar marinara spaghetti sauce
3 cups water
300g lasagne sheets
400g cooked lentils or beans
2tsp dried oregano
1tsp dried basil
1 clove garlic
50g Parmesan cheese, grated
salt to taste
Dilute the marinara sauce with the water.
In a large lasagne dish, place a layer of the spinach mix, then pasta, then sauce, repeat two more times, finishing with a layer of sauce. Sprinkle with the Parmesan cheese and another sprinkle of black pepper.
Cover with foil.
Bake in a moderate oven for 75 minutes.
