Strawberry Muffins

Introduction

Ingredients

    1 egg
    1/2 cup skim milk
    1/4 cup sugar free apple sauce
    1-1/2 cups all purpose flour
    1/4 cup Splenda for baking
    2 tsp. baking powder
    1/2 tsp. salt
    1-1/2 cups chopped, fresh strawberries

Directions

In a bowl, beat egg, add milk and apple sauce. combine flour, sugar, baking powder and salt; stir into egg mixture just until moistened. Fold in strawberries. Fill greased or paper-lined muffin pan 3/4 full. Bake at 400 degrees for 20-25 minutes or until muffins test done. Cool for 5 minutes before removing from pan to wire rack.

Yield: 10-11 muffins
