Ingredients

Per Serving:
1Flour tortillas
Egg Beaters, 1/4 cup
1 Tbsp. Salsa
1 Tbsp Chopped Scallions (green onions)
1 Tbsp. Shredded Cheddar Cheese =.06 cup cheese
Optional: Lowfat Sourcream, Olives, etc.
Directions
Chop green onions.
Add with salsa to egg beaters.
Spray pan and pour egg mixture into pan. Cook over med- high heat until egg is done.
Sprinkle flour tortilla with cheese. Place egg mixture down the middle. Warm slightly in microwave about 30 seconds. Add more salsa, and other condiments if desired.
Enjoy!
Recipe is easily multiplied according to how many you want to serve.
I use I Tbsp. shredded cheddar, but not being able to find that. The measurement is .06 cup.
