Mild Chicken Curry

A mild family curry with succulent chicken fillets and chunky vegetables.

Number of Servings: 4

Ingredients

    2 tsp Olive Oil
    450g checken breast fillets, cut each into 6 pieces or I use vegetarian type chicken
    4 potatoes, cut into wedges
    1 onion, cut into wedges
    1 carrot, cut into 8 pieces
    1 pkt MAGGI (or like) Mild Chicken Curry Cooking Sauce
    1 1/4 cups water
    2 long green zucchini, cut each into 8 pieces
    1 cup peas (frozen or fresh or canned)
    1/4 cup low fat milk

Directions

1. Heat 2 tsp olive oil in pan, brown chicken, remove from pan.
2. Add potatoes, onion and carrot, cook 2 minutes
3. Add combined MAGGI Mild Chicken Curry Cooking Sauce and 11/4 cups water, bring to boil, simmer covered 15 minutes.
4. Add zucchini and chicken, simmer covered 20 minutes until cooked.
5. Add peas and milk, simmer 2 minutes.
6. Serve over Rice or on its own.
